How do I store my biltong?

Sliced biltong is a fresh meat product that must be stored a specific way. Upon arrival, remove the sliced biltong from the plastic package and put it in a paper bag, a glass bowl or plate.

Shuffle the biltong daily to ensure fresh airflow. This gives you an excuse to snack on it :) Best if consumed within 2-3 days.

Refrigerate in the paper bag, shuffle daily.

The biltong will continue to dry and cure, and with fresh airflow it will last up to one year. Most importantly, do not reseal the biltong back into the plastic bag after opening. The meat itself is a cured product and will last up to 1 year if frozen, but resealing the moist biltong in the plastic bag will result in mold. Biltong is best stored in a paper bag upon arrival.

If you would like to store long term, deep freeze upon arrival and thaw when you are ready to eat.

Biltong slabs are vacuum sealed and do not need to be taken out of the plastic immediately like the slices do. But once the seal is broken, store in a paper bag. For long term storage, deep freeze and thaw.

Droewors sticks are also vacuum sealed and do not need to be stored in a paper bag. Once opened, consume within 4 days. For long term storage, deep freeze and thaw when ready to eat.



Do I need to refrigerate after opening? 

We recommend you refrigerate after opening, especially if not eaten in 2-3 days. The best way to store your biltong after opening is in a brown paper bag or on an open tray for air-flow. The biltong will continue drying and curing after opening. 

Why is there so much fat? 

Fat is where it’s at! Your brain needs saturated fat to function well. Getting enough fat is key for healthy nutrition. Our biltong has fat and occasionally, connective tissue. Parts might be tougher than others, but that connective tissue is high in collagen! Which is also essential for good health. 

Can I make biltong at home?

Yes! In South Africa (where it originated) family recipes are a source of pride and tradition. You can make biltong out of a variety of different meats in a DIY biltong box (must have air-flow). Experiment with some recipes with your family! 

Where do you source your beef and bison? 

We source our beef and bison from South Dakota. These ruminants have a quality life roaming and grazing in the Great Plains. They are raised on pasture with added hormones or antibiotics.
